I am a pizza lover. Pepperoni, olives, and green peppers. Honey crust basted with olive oil. Roasted garlic marinara sauce. The previous three sentences are usually enough to set me on a dead sprint into town. By the time I make it to a restaurant that serves pizza, they usually ask if I’m ok. I used to make an attempt at collecting myself by breathing slowly and then justifying my inexplicably ravenous look by replying that I hadn’t had a bite all day. Until one day when I used that excuse and the guy bit me.

Well, my business of the month serves the best pizza on the island and they don’t bite! The winner is…

The Manta Ray Cafe

This place is awesome. From the first time I visited, their service has been excellent. The dining area has a great view of the ocean and there are lots of friendly fish to keep you entertained if you choose to sit by the rails. They have a great selection of drinks and can always recommend the right combination…ever tried pineapple pizza with Pina Coladas? This is the place to experience that unique taste, and many more.

I look forward to seeing some of your comments about the Manta Ray Cafe for those of you who have been lucky enough to enjoy it for yourselves. For those of you who have, please share with the rest of us your favorite dish so we can try it next time we go back!

Yesterday was a great day. Just when I thought it couldn’t get any better after a full day of scuba diving on the Gold Chain Reef with some locals, I ran into a guy on the walk home who told me this joke that made me chuckle the rest of the way home. I just had to share it with you to pass on the gift of laughter:

Three guys are stuck on a deserted island, when one of them finds a lamp on the beach. He picks it up and gives it a little rub and a genie pops out. The genie looks at the three guys and says: “I normally give three wishes, but since there are three of you, I will grant each of you one wish.”

Well, the first guy is sick and tired of being on the island, so he wishes to go back home. POOF!!! He disappears. The second one said he, too, is tired of the island, and wishes to go home. POOF!!! He too disappears. The genie then turns to the last guy and asks him what his wish is.

“Gee,” he says,” I’m awfully lonely here by myself. I wish my friends were still here!”

Ha! The world is such a better place with friends. Good night to all of my friends out there reading my blog – if I could, I would wish you to my side here on the not-so-deserted Roatan Island in paradise.

So 1,000 people walk into a bar holding job applications.
The bartender says, ”What do I look like, a Google TV ad contest?”
Thank you, thank you. I accept PayPal if you want to leave a tip!

I will soon make a post titled “How to Climb a Palm Tree (without breaking a limb)” and include a video of me climbing a palm tree. I would offer free lessons to anyone who wants to learn. I learned this skill from some locals in Papua New Guinea, and also made many attempts while living in Puerto Rico. Stay tuned!
